1991—2011年中国9省(自治区)农民食物摄入变化趋势

Food consumption trends of farmers from 9 provinces (autonomous regions) in China in 1991-2011

  • 摘要: 目的 描述我国9省(自治区)18~65岁成年农民食物消费现状及变化趋势。

    方法 采用分层多阶段整群随机抽样的方法,利用“中国健康与营养调查” 1991—2011年间8轮随访数据,选择18~65岁农民作为研究对象。膳食调查采用“连续3天24小时”回顾询问法调查居民摄入的所有食物和称重记账法调查调味品消费量。分析各类食物消费量的变化趋势,并与2016版中国居民平衡膳食宝塔的食物推荐摄入量进行比较。

    结果 2011年,农民平均每日谷薯类、蔬菜、水果、肉类、蛋类、水产品、奶及奶制品、大豆及坚果、食用油、食盐摄入量分别为555.7、338.5、80.4、63.5、28.5、20.4、2.3、22.1、40.5、10.0 g;与1991年相比,2011年谷薯类、蔬菜、食盐和腌制蔬菜平均每日摄入量分别减少60.7、26.5、4.9、6.3 g,呈下降趋势;面粉及其制品、水果、肉类、食用油摄入量分别增加29.1、75.0、17.5、8.4 g,呈增加趋势。2011年,谷薯类、蔬菜、水果、肉类、水产品、蛋类平均每日摄入量满足推荐值的比例分别为25.62%、36.93%、10.54%、21.54%、10.28%、11.78%。

    结论 1991—2011年,农民膳食质量总体有所提高,但农民膳食模式仍偏离“平衡膳食”模式。

     

    Abstract: Objective To describe the status quo and trends of food consumption of adult farmers at the age of 18-65 years from 9 provinces (autonomous regions) in China.

    Methods The data of 8 rounds of follow-up visits of China Health and Nutrition Survey from 1991 to 2011 were used. The farmers aged 18-65 years were selected as study subjects by stratified multi-stage cluster random sampling method. Information on food intake and condiment intake was collected by 3-day 24-hour dietary recall and weight method. The changes of various food consumption were analyzed, and compared with the recommended intakes of the dietary pagoda for Chinese residents (2016).

    Results In 2011, the farmers' average daily intakes of cereals and tubers, vegetables, fruits, meat, eggs, aquatic products, milk and dairy products, beans and nuts, edible oil, and salt were 555.7, 338.5, 80.4, 63.5, 28.5, 20.4, 2.3, 22.1, 40.5, and 10.0g, respectively. Compared with the data of 1991, the average daily intake of cereals and tubers, vegetables, salt, and salted vegetables decreased by 60.7, 26.5, 4.9, and 6.3 g, respectively, in 2011, showing a downward trend over time; the average daily intakes of flour and its products, fruits, meat, and edible oils increased by 29.1, 75.0, 17.5, and 8.4 g, respectively, in 2011, showing a upward trend over time. In 2011, the proportion of farmers whose intakes of cereals and tubers, vegetables, fruits, meat, aquatic products, and eggs met the recommended value of balance diet pagoda were 25.62%, 36.93%, 10.54%, 21.54%, 10.28%, and 11.78%, respectively.

    Conclusion From 1991 to 2011, Chinese farmers' general dietary quality is improved, but their dietary pattern still deviates from the "balanced diet".
