Hygiene Security of Catering Food, Public Place and Drinking Water in Large-Scale Events:An Integrated Quantitative Risk Evaluation

  • Objective To discuss integrated quantitative risk evaluation of the safety of catering food, public places and drinking water in large-scale events in order to provide scientific basis for the selection of reception units as well as the work of hygiene security.

    Methods Delphi expert consultation method was used to establish the indicator system of the integrated risk evaluation of catering food, public place and drinking water safety, and to determine the weight of the indicators. Integrated index method was used to establish linear integrated risk evaluation model.

    Results The average length of service of the 30 experts was (20.63& #177;5.80) years. In two rounds of consultations, their response rates were both 100%, the average authoritative coefficients were 0.86& #177;0.06 and 0.89& #177;0.06, and Kendall's coefficient were 0.807 (χ2=1858.758, P<0.01) and 0.869 (χ2=2018.723, P<0.01). A total of 3 primary, 13 secondary and 54 tertiary indicators for integrated risk assessment were identified. Their weights were measured, and that of catering food, public place and drinking water hygiene were 5.37, 2.54 and 2.09, respectively. A linear integrated risk evaluation model was established.

    Conclusion The linear integrated risk evaluation model of catering food, public place and drinking water hygienic security in largescale events can provide scientific evidence and technical support for the security of public health and the selection of reception units.
